Today was a very busy day. In addition to the regular washing I do on Wednesdays (and Saturdays), I did a fair bit of cleaning (bathroom and kitchen). I also made two of the food items for the feast I’m hosting on Saturday and prepared my sourdough for the first stage of baking. The food items I made are Skyr and Homemade Butter.

Making butter is tedious work and takes even longer when you don’t start with cream. I made it with sour cream. My source said to make it with sour milk (fermented milk, not milk that’s gone off) and cream. But I couldn’t find any instructions on how to do that, measurements etc. So instead I went with full-fat sour cream.

I had to stop three times because my mixer was getting warm, and I took a break to let Lilith watch the children’s shows on TV. So it took me from 4:30 to 7:30 before I was completely finished, and the butter was in its container. When I’m done with the Skyr tomorrow, I’ll have more whey than I have a use for. If you want some, let me know. I’m using the buttermilk from the butter making for baking.  I thought I might use it to add some taste to the Leiv.

Since I don’t have access to a living Skyr culture and þettir, I made it by heating soured milk until it curdled, and then straining it. I left it hanging for a number of hours so that as much as possible of the whey would run off. I’m adding whipped cream to make it smoother, and berries and other things after I make some more tomorrow.

My initial estimate of the number of people coming to the feast was wrong. The number is 15 (at least), so I’m cooking for 20. This led to some extra shopping this afternoon. So my hours to do these tasks were cut even shorter. Having shoulders that are continuously getting worse doesn’t help, but I get things done by doing a little at a time. I am very happy I have modern appliances, or I would really be struggling. I’m having an even more busy day tomorrow, and the same goes for Friday and Saturday morning.
