I did another food experiment for lunch yesterday. I followed a recipe given to me by Candace N’Diaye (go check out her art!). It’s Pad Thai, but it’s adapted to what was available.

Finding Rice Noodles and Tamarind Paste was easy, but I’m glad I had some Tiger Prawns in the freezer because all the shrimp I could find was in brine. I had to visit 5 different stores to find Scallions to replace the Garlic Chives. And finding Tofu was just as hard. As for Palm Sugar and unsalted (and peeled) Peanuts, no such luck.

So I had to go with regular, white sugar. In hindsight, I should have sliced the Scallions thinner because they got pretty dominant when I bit into the large pieces. I’ll try to remember that next time. Even though I cut the recipe in half, I still have enough for lunch today. It tasted great, and I’m glad I tried it. I was a bit worried it would be too spicy, but it wasn’t. I’m not used to spicy food at all. I even use less salt than most people. As for the recipe, I’ll publish a slideshow on YouTube on how I did it.
